5. Don't check them before cleaning
Before cleaning mussels, inspect them individually: the shells should be closed or close when touched, lightly pressed, or tapped. A mussel that is barely open doesn't necessarily need to be discarded: it may have opened to breathe. If it reacts and closes its valves, it can be kept. If, however, it remains completely open and shows no movement, it is prudent to discard it.
Mussels with broken, badly chipped, or abnormal odorous shells should also be discarded. This should be done immediately: cooking cannot restore the mollusks.
