1. Buying Loose or from Unclear Origin

The first mistake occurs before they even enter the kitchen: mussels should be purchased exclusively from fishmongers, supermarkets, or authorized retailers, in their original packaging and accompanied by the necessary information to identify their provenance. As filter-feeding mollusks, they can accumulate microorganisms, contaminants, or biotoxins present in the waters in which they live. For this reason, it's not enough for them to look fresh or smell good: they must come from a controlled supply chain.

It's therefore important to avoid mussels sold loose, unlabeled, or personally harvested from rocks, piers, and uncontrolled coastal areas. Remember that external appearance doesn't tell you whether a mollusk was farmed or harvested in safe waters.
