The light cheesecake with Greek yogurt and berries is a fresh, simple and much lighter dessert than the classic cold cheesecake. It does not contain butter in the base, does not include cream, classic sugar or gelatine, and is prepared directly in single-portion cups.

The base is made with wholemeal dry biscuits or without added sugar, softened with a little milk. In this way you get a compact and pleasant bottom without using melted butter. The cream, on the other hand, is prepared with Greek yogurt, vanilla and stevia or erythritol, for a fresh, protein-rich and delicate result.

The berry topping makes the dessert even better: it is prepared by cooking the fruit for a few minutes with a little sweetener, until a dense and fragrant compote is obtained. You can leave it rustic, with the pieces of fruit, or blend it if you prefer a smoother consistency.

This cheesecake is perfect for breakfast, as a snack or as a light end to a meal. It should be prepared in advance, so it has time to firm up in the refrigerator and become even better.
