Fill containers, preferably glass, with water. Then, as if cutting flowers, place the parsley in the water and pour it into the containers. Cover with a plastic bag, like a freezer bag, and seal it with a rubber band. Then wrap the bag tightly around the container. Cut off both ends of the bags to allow air to circulate. You can now place the jars of parsley in the refrigerator. It's best to place them on the bottle rack inside the door.
If you're short on space in your refrigerator, you can keep fresh parsley longer by placing it finely chopped in glass containers. Before closing plastic containers, place a piece of paper between the lid and the opening. The jar can then be placed in the refrigerator, preferably upside down.
