5. Lemons in oil and other preserves
You can also make preserves with lemons, so you can have them for many months. For example, you can make lemons in oil by following these steps: thoroughly wash the lemons, dry them, and cut them into thin slices, removing the seeds. Arrange the lemon slices in a container, alternating them with layers of coarse salt. Cover the container and let them rest in the refrigerator for 24-48 hours. The salt will help eliminate the bitterness and firm the pulp. After the required time, rinse the lemon slices thoroughly under cold running water to remove excess salt. Dry them thoroughly with paper towels.
Meanwhile, sterilize the glass jars and lids. Arrange the lemon slices in the jars, alternating them with spices of your choice (chili pepper, bay leaves, juniper). Cover the lemons completely with good-quality extra virgin olive oil: make sure all the slices are submerged to avoid oxidation.
