Butter cookies filled with dark chocolate and hazelnuts

These dark chocolate and hazelnut butter cookies are a refined and irresistible twist on the classic shortbread. Their aromatic dark cocoa dough, enriched with crunchy roasted hazelnuts and dark chocolate chips, offers a perfect marriage of textures and flavors. Easy to make and with impeccable results, they are ideal for any special occasion or simply for indulging yourself.

Ingredients:
225g unsalted butter, at room temperature — Butter is the key ingredient that determines the texture and flavor of these cookies. It needs to be at room temperature to cream well with the sugar and produce a light and airy dough. Unsalted butter allows for precise control over the final salt level of the cookies.
2/3 cup granulated sugar — Sugar adds sweetness to the dough and helps incorporate air into the butter when creaming, creating the tender, slightly crisp texture characteristic of shortbread. Granulated sugar is preferable to powdered sugar for a firmer texture.
1 teaspoon vanilla extract — Vanilla perfumes the dough and pairs beautifully with the rich flavor of cocoa and dark chocolate. For a more authentic and aromatic result, it is recommended to use pure vanilla extract.
2 cups sifted all-purpose flour — Sifted flour is essential for this cookie. Incorporating it sifted prevents lumps from forming and ensures a smooth dough. Its proportions with the cocoa determine the final texture of the cookie: compact, crumbly, and melt-in-your-mouth.
60 ml (1/4 cup) unsweetened cocoa powder — It's the unsweetened cocoa powder that gives these cookies their dark color and rich, intense flavor. It's mixed with the flour before being incorporated into the dough to ensure an even distribution of the chocolate flavor in every bite.
1/4 teaspoon salt — The salt balances the sweetness of the sugar and enhances the flavor of the cocoa and dark chocolate, making the overall taste more complex and profound. Although the amount is small, its effect on the final taste is clearly noticeable and very important.
3/4 cup chopped roasted hazelnuts — Chopped roasted hazelnuts provide a crunchy texture and a slightly sweet, toasty flavor that contrasts perfectly with the intensity of the cocoa. It's essential to pre-roast the hazelnuts to fully develop their flavor and aroma before incorporating them into the dough.
1/2 cup dark chocolate chips — The dark chocolate chips are evenly distributed throughout the dough, creating pockets of melted chocolate that enrich every bite. Their slight bitterness complements the sweetness of the dough and enhances the chocolate flavor of these cookies, making them even more indulgent and satisfying.
